Two reasons you should opt for this fresh bowl of turmeric chicken noodles and not the ones from your local take-away. Firstly a sexy bowl of noodles freshly made by your own hands is a damn side better than the ones you get from Phok Wok. Secondly you have control over the quality and ingredients you churn through your stomach.

Turmeric has enjoyed a surge in popularity due to its many beneficial health properties which you can google about to your heart’s content. A busy and damaging lifestyle is something we all take part in but, that does not mean we have to eat bad. These turmeric chicken noodles are packed with fresh veggies and a healthy grating of turmeric. Using 100% buckwheat noodles makes this steaming bowl of noodles gluten-free too.
We divide this recipe into three easy parts.
Cooking the noodles.
We will start by cooking the noodles – you guessed it – according to the instructions on the pack. When done just drain them through a colander and mix with a touch of sesame oil so they don’t stick and get a nice nutty flavour too. Set them aside until needed and if you over estimated the measure – good for you. Tomorrow you can make and awesome salad with the rest.
Cooking the vegetables and sauce.
Be as creative as you like here but, I like using peppers, aubergine and Chinese cabbage. Try out thinly grated carrot, kale, courgette or whatever else you fancy. Firstly we will cut our veggies into thin strips(about the same size as the noodles). Crush a garlic glove, grate a bit of ginger and chop up a chili. These go into the pan first at medium/high heat. I suggest you use a wok for this as it makes the process of cooking and shaking so much easier. After all you don’t see your local noodle master using a flat pan – do you? No you don’t. After a few shakes and the kitchen smelling like a good memory you are ready to add the vegetable strips. Cook them quick and keep shaking it up. Lastly we want to add a 1 tbsp of soy sauce,1 tbsp water, 1 tbsp honey and a tbsp of lime juice. Done. Take it of the heat and set aside.
Cooking the chicken.
Get nice chicken breast or two and cut it into thin strips across the grain(In many cases the difference between a tough and tender piece of meat). Spice it up with some fife spice and turmeric. Now our turmeric chicken is taking some shape right. Right. Sear the meat on medium heat for two minutes each side until cooked.

Throw it all together into the pan with a few pieces of spring onion and a fresh grating of turmeric. Shake it up some more and your ready to dig in.
